Why are there now 2 numbers for experience for cooking a dish? Is the first number the amount you get for cooking an unaltered dish & the second number added once the dish is fully mastered?

Dishes refilling
For the last couple of weeks, my dishes are refilling. Whenever I fill an online order & then leave the game, the next time I go into my cafe, that item is refilled like I didn't fill the order....
